06 - Pour the batter into the prepared baking dish, spreading evenly. Sprinkle chopped nuts and chia seeds on top if using.
07 - Bake for 35 to 40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out mostly clean with moist crumbs.
08 - Allow the breakfast bake to cool for 10 minutes before slicing into squares. Serve warm or at room temperature.

# Insider Tips:

01 -
  • You can prep it the night before and wake up to breakfast practically making itself
  • The protein keeps you full through that mid morning energy crash
02 -
  • Overmixing makes the texture rubbery so stop as soon as the dry ingredients disappear
  • Frozen blueberries can make the bake need 5 extra minutes in the oven
03 -
  • Let the bananas get almost black before mashing them for maximum natural sweetness
  • Cut the bake into squares while still slightly warm for cleaner edges
