01 - Preheat oven to 400°F and line a baking sheet with parchment paper.
02 - Heat a skillet over medium heat. Add ground beef, season with salt, pepper, garlic powder, and dried Italian herbs. Cook, stirring, until beef is browned and cooked through, about 5 minutes. Drain excess fat and let the beef cool slightly.
03 - On a lightly floured surface, unroll the pizza dough and shape it into a 12 x 10 inch rectangle.
04 - Evenly spread 1/2 cup pizza sauce over the dough, leaving a 3/4 inch border. Distribute the cooked beef over the sauce, arrange pepperoni slices, then sprinkle with mozzarella and Parmesan cheese.
05 - Starting from a long edge, roll the dough tightly into a log. Pinch the seam to seal.
06 - Slice the log into 8 equal pieces. Arrange cut side up on the prepared baking sheet.
07 - Brush roll up surfaces with olive oil. Bake for 12 to 15 minutes, or until golden brown and cheese is bubbling.
08 - Allow baked roll ups to cool for 3 minutes. Garnish with fresh basil or parsley if desired and serve with extra pizza sauce for dipping.
