# Insider Tips:

01 -
  • It comes together in the time it takes your guests to pour their first drink, no cooking required.
  • The combination of Greek yogurt and sour cream creates a base that is rich without being heavy, letting every vegetable shine through.
  • You can hand this to someone who claims they do not like vegetables and watch them reconsider.
02 -
  • If you skip the chilling step the dip will taste flat and separate because the flavors need time to marry in the cold.
  • Salting the cucumber and letting it drain for ten minutes before mixing prevents a puddle at the bottom of your bowl.
03 -
  • Use the finest holes on your grater for the carrot and the smallest dice you can manage for the pepper, because texture makes or breaks a dip like this.
  • Let the dip sit out for ten minutes before serving so it softens slightly and spreads more easily onto crackers.
