01 - Preheat oven to 375°F. Line a baking sheet with parchment paper.
02 - Combine mozzarella and cream cheese in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until completely melted and smooth.
03 - Add almond flour, baking powder, and salt to melted cheese mixture. Mix thoroughly. Add egg and continue mixing until a soft, sticky dough forms.
04 - Place dough between two sheets of parchment paper. Roll out to a ¼-inch thickness rectangle.
05 - In a small bowl, whisk together melted butter, minced garlic, and parsley.
06 - Transfer dough (with bottom parchment) to baking sheet. Brush with half the garlic butter. Bake for 15-18 minutes until golden brown.
07 - Remove from oven. Brush remaining garlic butter over hot breadsticks. Sprinkle with Parmesan cheese. Slice into 8 even sticks and serve warm.
