Moist and flavorful banana cake with ripe bananas, perfect for dessert or a comforting snack any time.

# What You Need:

→ Dry Ingredients

01 - 2 cups (250 g) all-purpose flour
02 - 1 tsp baking powder
03 - 1 tsp baking soda
04 - 1/2 tsp salt

→ Wet Ingredients

05 - 3 ripe bananas, mashed
06 - 3/4 cup (150 g) granulated sugar
07 - 1/2 cup (120 ml) vegetable oil
08 - 2 large eggs
09 - 1/4 cup (60 ml) milk
10 - 1 tsp vanilla extract

→ Optional Add-ins

11 - 1/2 cup (60 g) chopped walnuts or pecans
12 - 1/2 cup (90 g) chocolate chips

# Directions:

01 - Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan or line it with parchment paper.
02 - In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly distributed. Set aside.
03 - In a large bowl, beat the mashed bananas with granulated sugar, vegetable oil, eggs, milk, and vanilla extract until the mixture is smooth and well incorporated.
04 - Gradually fold the dry ingredient mixture into the banana mixture, stirring gently until just combined. Be careful not to overmix, as this can make the cake dense.
05 - If desired, gently fold in the chopped walnuts, pecans, or chocolate chips until evenly distributed throughout the batter.
06 - Pour the batter into the prepared cake pan and use a spatula to smooth the top into an even layer.
07 - Bake for 40–45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
08 - Allow the cake to cool in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.
09 - Slice into portions and serve plain, or pair with your preferred frosting such as cream cheese frosting.

# Insider Tips:

01 -
  • The batter comes together in one bowl with nothing fancy required and the reward is a cake that stays moist for days
  • Those overripe bananas you almost tossed are about to become the best thing in your kitchen
02 -
  • Opening the oven door before the 35 minute mark can cause the center to collapse and you will end up with a sunken cake that is dense instead of fluffy
  • Swapping oil for melted butter adds a richer flavor but the texture firms up faster so serve it the same day for the best experience
03 -
  • Freeze your overripe bananas whole and unpeeled then thaw them in a bowl overnight and the liquid that leaks out is pure banana flavor gold
  • Fold the batter with a spatula using gentle figure eight motions rather than stirring in circles and your crumb will be noticeably lighter
