Creamy soup with chicken, spinach, and broken lasagna noodles in a savory Parmesan broth.

# What You Need:

→ Protein & Dairy

01 - 2 cups cooked chicken breast, shredded
02 - 1 cup ricotta cheese
03 - 1 cup shredded mozzarella cheese
04 - 1/2 cup grated Parmesan cheese
05 - 4 cups low-sodium chicken broth
06 - 2 cups whole milk

→ Vegetables & Aromatics

07 - 1 medium onion, diced
08 - 3 cloves garlic, minced
09 - 2 cups baby spinach, roughly chopped
10 - 2 tablespoons unsalted butter

→ Pasta

11 - 8 lasagna noodles, broken into pieces

→ Seasonings

12 - 1 teaspoon dried basil
13 - 1 teaspoon dried oregano
14 - 1/2 teaspoon crushed red pepper flakes (optional)
15 - Salt and black pepper, to taste

→ Garnish

16 - Fresh parsley, chopped (optional)
17 - Additional grated Parmesan (optional)

# Directions:

01 - Melt the butter in a large pot over medium heat. Add diced onion and cook until softened, about 4 minutes. Add minced garlic and cook for 1 minute until fragrant.
02 - Pour in the chicken broth and whole milk. Stir to combine, then bring to a gentle simmer.
03 - Add broken lasagna noodles, dried basil, dried oregano, crushed red pepper flakes, salt, and black pepper. Simmer uncovered for 10–12 minutes, stirring occasionally, until noodles are al dente.
04 - Stir in shredded chicken and chopped spinach. Cook for 3–4 minutes until spinach wilts and chicken is heated through.
05 - Reduce heat to low. Add ricotta, mozzarella, and Parmesan cheeses, stirring until melted and soup reaches a creamy consistency. Taste and adjust seasoning as needed.
06 - Ladle the soup into bowls. Garnish with fresh chopped parsley and extra grated Parmesan cheese if desired.

# Insider Tips:

01 -
  • You get all the creamy, cheesy comfort of white lasagna in about one third of the time and effort
  • The soup version somehow feels even more cozy and comforting than the baked original, especially on busy weeknights
02 -
  • The soup will continue to thicken considerably as it cools because the pasta absorbs liquid, so add more broth when reheating leftovers
  • Do not let the milk come to a rolling boil or it may separate and become grainy instead of staying smooth
03 -
  • Break the noodles into varying sizes for more interesting texture in every bite
  • Stir a splash of heavy cream in with the cheeses for an even richer, more luxurious soup
