- Combine vanilla cake crumbs, softened cream cheese, butter, powdered sugar, and vanilla extract in a medium bowl. Mix thoroughly until a cohesive, dough-like consistency forms that holds together when pressed.
- Divide the mixture into 8 equal portions. Form each portion into a flattened oval shape resembling a bunny face. Insert a cakesicle stick into the center of each shape, pressing gently to secure.
- Transfer the shaped cakesicles to a refrigerator for 20 to 30 minutes until firm and cold to the touch. This step prevents the cake mixture from falling off the sticks during coating.
- Place white chocolate or candy melts in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until completely smooth and fully melted.
- Dip each chilled cake pop into the melted white chocolate, ensuring complete coverage. Gently tap the stick against the bowl edge to remove excess chocolate and achieve an even coating.
- Place coated cakesicles on a parchment-lined tray. While the chocolate coating remains soft, immediately attach candy eyes, sprinkles, or fondant bunny ears and noses.
- Allow the chocolate coating to set completely at room temperature, approximately 15 to 20 minutes. For faster setting, refrigerate briefly for 5 to 10 minutes. Apply additional details with food coloring pens or gel if desired.
